Apricot Glazed Pork Tenderloin

🔹 Ingredients (Serves 4)

  • 1.5 to 2 lb. pork tenderloin

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp dried thyme (or rosemary)

🧡 For the Apricot Glaze:

  • 1/2 cup apricot preserves or jam

  • 1 tbsp Dijon mustard

  • 1 tbsp soy sauce

  • 1 tsp apple cider vinegar or lemon juice

  • 1/2 tsp crushed red pepper flakes (optional for heat)

  • 1 clove garlic, minced

🔪 Instructions

1. Prep the Pork:

  • Preheat oven to 400°F (200°C).

  • Pat the pork tenderloin dry, then season all over with salt, pepper, garlic powder, onion powder, and thyme.

  • Heat olive oil in a large oven-safe skillet over medium-high heat.

  • Sear the pork on all sides until browned (about 5–6 minutes total).

2. Make the Glaze:

  • In a small saucepan, combine apricot preserves, Dijon mustard, soy sauce, vinegar/lemon juice, garlic, and red pepper flakes.

  • Warm over low heat, stirring, until the glaze is smooth and slightly thickened (3–5 minutes).

3. Glaze & Roast:

  • Brush a generous layer of glaze over the seared pork.

  • Transfer skillet to the oven (or use a baking dish).

  • Roast for 15–20 minutes, brushing with more glaze halfway through, until internal temp reaches 145°F (63°C).

4. Rest & Serve:

  • Let pork rest 5–10 minutes before slicing.

  • Serve with extra glaze drizzled over top.


Serving Ideas:

Pairs beautifully with roasted sweet potatoes, green beans, or wild rice.
