Apricot Glazed Pork Tenderloin

🔹 Ingredients (Serves 4)
1.5 to 2 lb. pork tenderloin
1 tbsp olive oil
Salt & pepper to taste
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dried thyme (or rosemary)
🧡 For the Apricot Glaze:
1/2 cup apricot preserves or jam
1 tbsp Dijon mustard
1 tbsp soy sauce
1 tsp apple cider vinegar or lemon juice
1/2 tsp crushed red pepper flakes (optional for heat)
1 clove garlic, minced
🔪 Instructions
1. Prep the Pork:
Preheat oven to 400°F (200°C).
Pat the pork tenderloin dry, then season all over with salt, pepper, garlic powder, onion powder, and thyme.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Sear the pork on all sides until browned (about 5–6 minutes total).
2. Make the Glaze:
In a small saucepan, combine apricot preserves, Dijon mustard, soy sauce, vinegar/lemon juice, garlic, and red pepper flakes.
Warm over low heat, stirring, until the glaze is smooth and slightly thickened (3–5 minutes).
3. Glaze & Roast:
Brush a generous layer of glaze over the seared pork.
Transfer skillet to the oven (or use a baking dish).
Roast for 15–20 minutes, brushing with more glaze halfway through, until internal temp reaches 145°F (63°C).
4. Rest & Serve:
Let pork rest 5–10 minutes before slicing.
Serve with extra glaze drizzled over top.
Serving Ideas:
Pairs beautifully with roasted sweet potatoes, green beans, or wild rice.
