Smoked Beef Brisket with BBQ Sauce


🛒 Ingredients:

  • 5–7 lb. whole beef brisket (flat or whole packer cut)

  • ¼ cup yellow mustard (binder)

  • ½ cup dry rub (salt, black pepper, paprika, garlic powder, onion powder, cayenne)

  • 1 cup apple juice (for spritzing)

  • 1 cup BBQ sauce (your choice—smoky, sweet, or spicy)

🔥 Instructions:

  1. Prep the Brisket:

    • Trim excess fat, leaving about ¼ inch fat cap.

    • Rub mustard over the brisket. Apply dry rub generously on all sides.

    • Let it rest at room temp for 30–45 minutes.

  2. Smoke the Brisket:

    • Preheat smoker to 225°F. Use oak, hickory, or applewood.

    • Place brisket fat-side up on the smoker.

    • Smoke for 6–8 hours (depending on size), spritzing with apple juice every hour.

  3. Wrap and Finish:

    • Once internal temp hits ~165°F, wrap in butcher paper or foil.

    • Continue smoking until it reaches 200–203°F internal temp.

    • Rest brisket wrapped in a cooler or warm oven for 1–2 hours before slicing.

  4. Serve:

    • Slice against the grain and drizzle with BBQ sauce.

Creamy Coleslaw

🛒 Ingredients:

  • 1 small head green cabbage, finely shredded

  • 1 carrot, grated

  • ½ cup mayonnaise

  • 2 tbsp apple cider vinegar

  • 1 tbsp Dijon or yellow mustard

  • 2 tsp sugar

  • Salt and pepper to taste

  • Optional: celery seed or chopped green onion

🥣 Instructions:

  1. In a large bowl, whisk together mayo, vinegar, mustard, sugar, salt, and pepper.

  2. Add cabbage and carrots, toss to coat evenly.

  3. Chill for at least 1 hour before serving.

Baked Beans with Bacon & Ground Beef

 Ingredients:

  • 3 (15 oz) cans baked beans (like Bush’s Original), undrained

  • 1 lb. ground beef

  • 5–6 slices bacon, chopped

  • ½ cup onion, finely chopped

  • ½ cup green bell pepper, finely chopped (optional)

  • ½ cup ketchup

  • ¼ cup brown sugar

  • 2 tbsp molasses

  • 1 tbsp yellow mustard

  • 1 tbsp Worcestershire sauce

  • 1 tsp smoked paprika (optional)

  • Salt and pepper to taste

🍳 Instructions:

  1. Brown the Beef:

    • In a large skillet, cook the ground beef over medium heat until fully browned.

    • Season with a little salt and pepper. Drain excess grease and set aside.

  2. Cook the Bacon & Veggies:

    • In the same skillet, cook chopped bacon until crisp. Remove and set aside on a paper towel.

    • Sauté the onions (and green pepper, if using) in the bacon drippings until soft, about 3–4 minutes.

  3. Mix Everything Together:

    • In a large baking dish or Dutch oven, combine:

      • Baked beans (with liquid)

      • Cooked ground beef

      • Sautéed onions/peppers

      • Ketchup, brown sugar, molasses, mustard, Worcestershire, and smoked paprika

      • Stir in half the cooked bacon

  4. Bake:

    • Top with the remaining bacon pieces.

    • Bake uncovered at 350°F for 45–60 minutes, until bubbly and slightly thickened.

    • For a deeper flavor, let it sit 15–20 minutes before serving.

  • Drink: Sweet iced tea, cold root beer, or a craft amber ale
