Blackened Catfish
Ingredients
4 (6-ounce) catfish fillets
2 tablespoons olive oil
2 tablespoons JDLâs house blackening spice blend (or store-bought)
Salt and pepper to taste
For the Roasted Red Pepper Cajun Cream Sauce:
1 cup heavy cream
1/2 cup roasted red peppers, pureed
1 tablespoon Cajun seasoning
1 tablespoon lemon juice
Salt to taste
Cooking Instructions
Prepare the Catfish: Pat the catfish fillets dry with paper towels. Season both sides with salt and pepper, then coat generously with the blackening spice blend.
Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.
Cook the Catfish: Carefully place the seasoned catfish fillets in the hot skillet. Cook for about 4-5 minutes on each side, or until the fish is blackened and cooked through, with a crispy exterior.
Make the Sauce: While the catfish is cooking, combine the heavy cream, pureed roasted red peppers, Cajun seasoning, lemon juice, and salt in a small saucepan. Heat over medium-low, stirring occasionally, until warmed through.
Serve: Plate the blackened catfish over a bed of Cajun rice pilaf or creamy grits. Drizzle with the roasted red pepper Cajun cream sauce and garnish with chopped parsley and a lemon wedge.

Smoked Gouda Mac & Cheese

Cook the Pasta: In a large pot, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute. Gradually add the milk, whisking constantly until the mixture thickens.
Add the Cheese: Remove from heat and stir in the sharp cheddar and smoked gouda until melted and smooth. Season with garlic powder, onion powder, salt, and pepper.
Combine: Add the cooked macaroni to the cheese sauce, stirring until well combined.
Bake: Preheat the oven to 350°F (175°C). Transfer the mac and cheese to a baking dish. In a small bowl, mix the breadcrumbs with melted butter and sprinkle over the top. Bake for 25-30 minutes, or until golden and bubbly.
