One-Pot Lemon Garlic Shrimp Pasta

Ingredients:

  • 12 oz spaghetti or linguine

  • 1 lb. large shrimp, peeled and deveined

  • 4 cloves garlic, minced

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 1 cup chicken or vegetable broth

  • Juice and zest of 1 lemon

  • 1/4 cup chopped parsley

  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package directions and reserve 1 cup of pasta water.

  2. In a large skillet, heat olive oil and butter over medium heat. Add garlic and sauté for 1 minute.

  3. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.

  4. Add broth, lemon juice, and zest to the skillet. Simmer for 2-3 minutes.

  5. Toss in the pasta and reserved water. Stir to coat, then add the shrimp and parsley.

  6. Season with salt and pepper. Serve hot.
