One-Pot Lemon Garlic Shrimp Pasta

12 oz spaghetti or linguine
1 lb. large shrimp, peeled and deveined
4 cloves garlic, minced
2 tbsp olive oil
2 tbsp butter
1 cup chicken or vegetable broth
Juice and zest of 1 lemon
1/4 cup chopped parsley
Salt and pepper to taste
Instructions:
Cook the pasta according to package directions and reserve 1 cup of pasta water.
In a large skillet, heat olive oil and butter over medium heat. Add garlic and sauté for 1 minute.
Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
Add broth, lemon juice, and zest to the skillet. Simmer for 2-3 minutes.
Toss in the pasta and reserved water. Stir to coat, then add the shrimp and parsley.
Season with salt and pepper. Serve hot.
