BBQ Ribs with Carolina BBQ Sauce Recipe

Ingredients:
For the Ribs:
2 racks of pork baby back ribs or Spareribs
2 tbsp olive oil
2 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp brown sugar
1 tsp salt
1 tsp black pepper
1 tsp cayenne pepper (optional for heat)
For the Carolina BBQ Sauce:
1 cup yellow mustard
½ cup apple cider vinegar
¼ cup honey
¼ cup brown sugar
1 tbsp Worcestershire sauce
1 tbsp hot sauce (optional)
1 tsp garlic powder
1 tsp black pepper
½ tsp salt
Instructions:
Prepare the Ribs:
Remove the membrane from the back of the ribs for better seasoning penetration.
In a small bowl, mix paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne.
Rub the ribs with olive oil, then coat them generously with the seasoning mix.
Wrap in foil and refrigerate for at least 2 hours (or overnight for best flavor).
Cook the Ribs:
Preheat your grill or smoker to 275°F (135°C).
Place the ribs on the grill, bone side down, and cook for 2.5 to 3 hours, occasionally basting with apple cider vinegar.
For oven cooking, place ribs on a baking sheet, cover with foil, and bake at 275°F for 2.5 hours, then broil for a crispy finish.
Make the Carolina BBQ Sauce:
In a saucepan over medium heat, whisk together all sauce ingredients.
Simmer for about 10 minutes, stirring occasionally.
Remove from heat and let it cool slightly.
Glaze and Serve:
During the last 30 minutes of cooking, brush the ribs with the Carolina BBQ sauce.
Once done, let them rest for 10 minutes, then slice and serve with extra sauce on the side.
