BBQ Ribs with Carolina BBQ Sauce Recipe


Ingredients:

For the Ribs:
  • 2 racks of pork baby back ribs or Spareribs

  • 2 tbsp olive oil

  • 2 tbsp smoked paprika

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tbsp brown sugar

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp cayenne pepper (optional for heat)

For the Carolina BBQ Sauce:
  • 1 cup yellow mustard

  • ½ cup apple cider vinegar

  • ¼ cup honey

  • ¼ cup brown sugar

  • 1 tbsp Worcestershire sauce

  • 1 tbsp hot sauce (optional)

  • 1 tsp garlic powder

  • 1 tsp black pepper

  • ½ tsp salt

Instructions:

  1. Prepare the Ribs:

    • Remove the membrane from the back of the ribs for better seasoning penetration.

    • In a small bowl, mix paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne.

    • Rub the ribs with olive oil, then coat them generously with the seasoning mix.

    • Wrap in foil and refrigerate for at least 2 hours (or overnight for best flavor).

  2. Cook the Ribs:

    • Preheat your grill or smoker to 275°F (135°C).

    • Place the ribs on the grill, bone side down, and cook for 2.5 to 3 hours, occasionally basting with apple cider vinegar.

    • For oven cooking, place ribs on a baking sheet, cover with foil, and bake at 275°F for 2.5 hours, then broil for a crispy finish.

  3. Make the Carolina BBQ Sauce:

    • In a saucepan over medium heat, whisk together all sauce ingredients.

    • Simmer for about 10 minutes, stirring occasionally.

    • Remove from heat and let it cool slightly.

  4. Glaze and Serve:

    • During the last 30 minutes of cooking, brush the ribs with the Carolina BBQ sauce.

    • Once done, let them rest for 10 minutes, then slice and serve with extra sauce on the side.
