Grilled Salmon with Sautéed Vegetables and Lemon

Ingredients:
For the Salmon:
2 salmon fillets
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Chopped fresh parsley or chives for garnish
For the Vegetables:
8-10 asparagus spears, trimmed
1 cup snap peas
1 carrot, thinly sliced
1 yellow bell pepper, thinly sliced
1 tablespoon olive oil
1 teaspoon garlic (minced)
Salt and pepper to taste
For Garnish:
Lemon slices
Instructions:
Prepare the Salmon:
In a small bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper.
Brush the mixture over both sides of the salmon fillets.
Let the salmon marinate for 15-20 minutes while you prepare the vegetables.
Grill the Salmon:
Heat a grill or grill pan over medium-high heat.
Place the salmon fillets skin-side down on the grill and cook for 4-5 minutes.
Flip the salmon and cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from heat and set aside.
Prepare the Vegetables:
Heat olive oil in a large skillet over medium heat.
Add garlic and sauté for 30 seconds until fragrant.
Add the asparagus, snap peas, carrots, and bell peppers.
Season with salt and pepper, and sauté for 5-7 minutes until the vegetables are tender-crisp.
Plate the Dish:
Arrange the sautéed vegetables on a plate.
Place the grilled salmon on top or beside the vegetables.
Garnish with fresh parsley or chives and lemon slices.
