Grilled Salmon with Sautéed Vegetables and Lemon

Ingredients:

  • For the Salmon:

    • 2 salmon fillets

    • 2 tablespoons olive oil

    • 1 tablespoon lemon juice

    • 1 teaspoon garlic powder

    • 1 teaspoon paprika

    • Salt and pepper to taste

    • Chopped fresh parsley or chives for garnish

  • For the Vegetables:

    • 8-10 asparagus spears, trimmed

    • 1 cup snap peas

    • 1 carrot, thinly sliced

    • 1 yellow bell pepper, thinly sliced

    • 1 tablespoon olive oil

    • 1 teaspoon garlic (minced)

    • Salt and pepper to taste

  • For Garnish:

    • Lemon slices

Instructions:

  1. Prepare the Salmon:

    • In a small bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper.

    • Brush the mixture over both sides of the salmon fillets.

    • Let the salmon marinate for 15-20 minutes while you prepare the vegetables.

  2. Grill the Salmon:

    • Heat a grill or grill pan over medium-high heat.

    • Place the salmon fillets skin-side down on the grill and cook for 4-5 minutes.

    • Flip the salmon and cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

    • Remove from heat and set aside.

  3. Prepare the Vegetables:

    • Heat olive oil in a large skillet over medium heat.

    • Add garlic and sauté for 30 seconds until fragrant.

    • Add the asparagus, snap peas, carrots, and bell peppers.

    • Season with salt and pepper, and sauté for 5-7 minutes until the vegetables are tender-crisp.

  4. Plate the Dish:

    • Arrange the sautéed vegetables on a plate.

    • Place the grilled salmon on top or beside the vegetables.

    • Garnish with fresh parsley or chives and lemon slices.
