"Southern-Style Mixed Greens with Smoky Ham Hocks"

Ingredients
1 bunch turnip greens, rinsed and chopped
1 bunch mustard greens, rinsed and chopped
1 bunch mixed greens (like kale or collards), rinsed and chopped
2 smoked ham hocks
6 cups chicken broth (or water)
1 medium onion, diced
3 cloves garlic, minced
1 teaspoon crushed red pepper flakes (optional)
1 tablespoon apple cider vinegar
1 tablespoon sugar (optional, to balance flavors)
Salt and pepper, to taste
Instructions
Prepare the Ham Hocks
In a large pot, combine the ham hocks and chicken broth. Bring to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for 1-2 hours until the ham hocks are tender, and the broth is flavorful.
Add the Greens
Once the ham hocks are tender, add the diced onion, garlic, and all the greens to the pot. Stir to mix them with the broth and ham hocks.
Season the Greens
Add the crushed red pepper flakes (if using), apple cider vinegar, sugar (if desired), and a pinch of salt and pepper. Stir everything together.
Simmer
Cover the pot and let the greens simmer on low heat for 45-60 minutes, stirring occasionally, until the greens are tender and infused with the smoky flavor of the ham hocks.
Adjust Seasoning
Taste and adjust seasoning with more salt, pepper, or vinegar, as needed.
Serve
Remove the ham hocks from the pot, shred the meat, and discard the bones and fat. Return the shredded meat to the greens. Serve hot as a side dish or with cornbread for a hearty meal.
Tips
For extra flavor, you can add a dash of hot sauce or a few slices of jalapeños.
This dish can be refrigerated and often tastes even better the next day as the flavors meld together.
