Taco Bowl

Taco Bowl Recipe

Ingredients:

  • 1 lb. ground beef or chicken

  • 1 tbsp olive oil

  • 1 packet taco seasoning (or homemade blend)

  • 2 cups cooked white or brown rice

  • 1 can black beans, drained and rinsed

  • 1 cup fresh salsa

  • 1 avocado, sliced

  • 1 cup shredded cheddar or Mexican cheese blend

  • ½ cup sour cream or Greek yogurt

  • 1 tbsp lime juice

  • ¼ cup chopped cilantro

  • Tortilla chips (optional for crunch)

Instructions:

  1. Cook the Protein: Heat olive oil in a pan over medium heat. Add ground beef or chicken, breaking it up as it cooks. Once browned, drain any excess grease. Stir in taco seasoning and a splash of water, simmering for 5 minutes.

  2. Prepare the Rice: Cook rice according to package instructions. Fluff with a fork and stir in a bit of lime juice and cilantro.

  3. Assemble the Bowl: In a serving bowl, add a scoop of rice as the base. Top with cooked protein, black beans, fresh salsa, avocado slices, and shredded cheese.

  4. Garnish & Serve: Drizzle with sour cream, sprinkle with extra cilantro, and add tortilla chips if desired. Serve immediately and enjoy!
