Taco Bowl Recipe
Ingredients:
1 lb. ground beef or chicken
1 tbsp olive oil
1 packet taco seasoning (or homemade blend)
2 cups cooked white or brown rice
1 can black beans, drained and rinsed
1 cup fresh salsa
1 avocado, sliced
1 cup shredded cheddar or Mexican cheese blend
½ cup sour cream or Greek yogurt
1 tbsp lime juice
¼ cup chopped cilantro
Tortilla chips (optional for crunch)
Instructions:
Cook the Protein: Heat olive oil in a pan over medium heat. Add ground beef or chicken, breaking it up as it cooks. Once browned, drain any excess grease. Stir in taco seasoning and a splash of water, simmering for 5 minutes.
Prepare the Rice: Cook rice according to package instructions. Fluff with a fork and stir in a bit of lime juice and cilantro.
Assemble the Bowl: In a serving bowl, add a scoop of rice as the base. Top with cooked protein, black beans, fresh salsa, avocado slices, and shredded cheese.
Garnish & Serve: Drizzle with sour cream, sprinkle with extra cilantro, and add tortilla chips if desired. Serve immediately and enjoy!
